Energy Blaster: Ginger Mint Green Smoothie

Kale, Ginger, Mint Smoothie top viewI don’t know about you but as soon as Daylight Savings Hits my energy levels go right down. Couple that with cold and flu season, and I’m just toast. I’m tired, my immune system is shot, I feel dehydrated.. you know, everything that’s part and parcel with the fall/winter blues.

A couple of weeks ago I was out with my daughter and I was totally dragging myself around the mall. I’ll confess I was in a black mood and I just wanted to go home. She suggested we go to one of those juice places—you know the ones where you can drink your daily allotment all in one slurp? But this one also had fruit & vegetable smoothie combinations sans added sugar or the misleading frozen yoghurt.

Ginger Mint Green Energy Smoothie

I’m not a big fan of juice. I like to eat my calories and if I’m drinking them, they better be full of alcohol. But I was feeling really peckish and was instantly drawn to their green energy smoothie, which, from the description, seemed like it would perk me up. And it did. Full of vim and vigour this drink was: ginger, mint, greens, pineapple juice. I loved the combo of spicy, sweet and minty and somehow the combo just revved my engine.

So much so that the next day I went to the store and bought the ingredients to recreate it. Now, I can’t get enough of it. It gives me energy before the gym and brightens me up even on the rainiest day. I know you’re going to love it too.

I have a Blendtec blender, but a really good blender will do the trick. As usual, the recipe is loosey goosey, so adapt to your taste buds.

Ginger Mint Green Smoothie (serves 1 large serving)

Ginger Mint Green Energy Smoothie

What You Need

1 piece of ginger, peeled (about the size of your thumb, or maybe 1/8 cup)

1/4 of a tasty, crisp apple (cored, not peeled)

1/4 cup (loosely packed) mint leaves, washed

2 or 3 big handfuls of baby kale or baby spinach or a combo

Juice from half a lemon

1 cup coconut water

1/2 cup or so unsweetened pineapple juice

1 cup ice

What You’ll Do:

Add all ingredients to blender. If using Blendtec or Vitmamix, set to smoothie and go. If using regular blender, blend until all of the ingredients are completely pureed and combined.

Note: if you’re not using a blendtec you may need to cut up the ginger, peel and cut the apple, etc.
